Suggar crust on jelly?

A friend gave me some awesome blackberry jelly a while back, but it's developed little crunchy sugar balls on top. :( Is there anything I can do about it? The sugar clumps aren't connected in a crust or anything, and they are just located at the surface of the jelly. I'm not a jelly person, but I really like the flavor of this and would like to ( Read more... )

If you're absolutely sure it's just sugar, and you find the sugar objectionable, take a spoon and mix the sugar balls into the rest of the jelly, and the sugar should re-dissolve. If it doesn't dissolve completely, gently and briefly heat the jelly and stir some more.

I'm pretty sure it's just sugar... what else could it be? o.o

It tastes just like the jelly, and has the consistency of sugar. It's not super hard, it crunches easily and you can squeeze it into grit between your fingers.

I talked to my mom, who grew up helping my grandma make homemade jelly, and her guess was either it is evaporating a bit, or the jelly was not cooked long enough to supersaturate all that sugar. But she doesn't think it is harmful.

Thanks!

I don't mind it much right now, the little sugar balls aren't that big, but I don't want it to ruin the jelly if they keep forming.

I'm wondering if that fact that I had it in a spot in my fridge where the top might have frozen a bit could have contributed.

They will keep forming, over time. If you intend to keep the jelly for a long period of time, you might actually want to freeze it to prevent the sugar from falling out of it more than it already has. I think you should make an effort to eat the jelly soon, while it's at its best.

I made peach jelly once that did this to me. Just heat the jelly up and the sugar should dissolve back in it.
