Good afternoon, I am seeking recipes that use canned beans as a mainstay. Does anyone have a bean burger recipe? OR any solid recipe that uses quite a lot of beans?
These Dominican stewed roman beans are really easy and good, as are these sweet and spicy black beans, both made with canned beans. Houmous can be whipped up almost immediately from canned chickpeas, but black beans, garlic and chipotle or white beans, mint and feta are both good. Any of these on toast with avocado and red onion is a tasty snack.
My favourite bean salad is a can of borlotti beans mixed with minced parsley, diced fresh tomatoes, diced red onion, kalamata (or your favourite) olives, a dijon mustard, lemon juice & olive oil dressing and toasted pita chips. Other good combos include: chickpeas, grated carrot and cilantro with a red wine vinaigrette; chickpeas or white beans with feta, dill and sundried tomatoes (or artichoke hearts); and black beans, fresh corn, diced bell pepper, onion and avocado (with some minced jalapeno if you like it spicy). These are all easily doubled or tripled if you have a lot of people to feed.
Frying up a can of white or butter beans with spicy sausage until it's all crispy makes a great mix-in with rice, or it's real good stuffed into a roll with some greens sautéed in the sausage fat.
