Alright, I want to eat less meat, but a lot of the time I make a vegetarian recipe, it feels like it should be a side dish ( Read more... )

We eat vegetarian meals pretty often in this house, though we're not vegetarians. By not feeling vegetarian, do you mean you want recipes that are more filling? More savory? Usually the best way to do both is just to bulk up on protein sources. Beans are great, as are eggs. One of my favorite recipes is for shakshuka, eggs poached in a spicy tomato sauce. It's super filling, and it's easy to tweak the seasoning if spicy isn't your thing. There are lots of great recipes for it, but this is what I use ( ... )

*LOL* I actually planned on making that later this week :)

I guess more filling. I don't really know how to describe it, I just find a lot of vegetarian meals feel like they're missing something
I'd love some ideas, vegetarian cooking is out of my area of expertise, so I have no clue what I'm doing

Haha, I must have read your mind!

Let's see. For chilis, we often add some pearl barley in to bulk them up. Since beans are incomplete proteins, it really helps to make sure you're serving a grain with them.

For pastas, we often use mushrooms where meat would be used. My mom makes a stroganoff with portobello mushrooms instead of beef. For a tomato sauce, I like to mince some button mushrooms up, then saute with onion, garlic, lots of fennel seed and black pepper, red pepper flakes, oregano, and basil before adding crushed tomatoes to finish the sauce. It's a similar flavor profile to Italian sausage. Black olives go well in there too. And I haven't tried this recipe for spaghetti with chickpeas, but it looks great and I'm sure you could use vegetable stock instead of chicken stock if you wanted. Actually, now that I think about it, the vegetarian section on that site has a lot of good stuff, though a lot of it would feel like a side ( ... )

Oh, I never thought of adding barley to chili (which is crazy, because I LOVE barley & am always looking for new ways to use it)

Would hearty soups/stews fit the bill? For me, bean stews with lots of veg and potatoes in them are filling enough! I dont have exact recipes because they tend to fall in the category of 'throw all those leftover things in there', but if you like I could try and make something up.

I was going to suggest stuffed peppers but no oven makes that kind of impossible (although you could just make the filling separately, and then flame roast the peppers and probably get about the same effect:D )

I'm actually pretty good about making hearty soups, but I usually have leftover meat that I'm using up - I don't know why I don't think of soup when I have leftover veggies :P

This recipe for Naked Vegan Tacos was posted a couple years back on this community by layers_of_eli. I LOVE it. It's even more hearty if you add in some tofu and cheese. The mix of textures and sizes of food, along with awesome flavors really creates a complete meal that doesn't feel like a side dish. Since you don't have an oven you wouldn't be able to bake the potatoes but I don't see why you couldn't dice them up and saute them. I've done that with regular potatoes for breakfast.

Another great recipe we probably have at least every couple weeks is Iowa Girl's Chipotle Black Bean Burgers. The chipotle pepper in adobe sauce really makes this recipe so don't leave it out! This definitely fits in the 'stand-alone-not a side dish' bracket. :)

And finally...I know you don't have an oven so this will be tricky but this is a recipe that I've made and loved (though I confess I did serve it as a side dish) was Butternut Squash Stuffed Shells with Lemon Sage Brown Butter Sauce. OMG. This one is so delicious.

Those tacos sound amazing! I don't know if I'd be that ambitious most days (they seem like a bit of work), but I'll be bookmarking that for later :)
