Pumpkin soup with fresh coriander ,peanuts and chili

Already not so warm, not everything is so green, but I have a solution. For example, to prepare insanely delicious pumpkin soup to warm your stomach and soul. It is spicy , warm and very fragrant. Autumn inspires me.

Pumpkin 800 gr
Onions 1 PC (large)
5 cloves of garlic
3 tablespoons grated ginger
Olive oil 4-5 tablespoons
Thyme 1 tsp
Chicken broth 2 cups (can be just water)
0,5 tablespoon fish sauce
Salt and pepper ( I used white)
Double cream 50 ml
For plating :
fresh coriander
chopped peanuts
chili



Pumpkin peel and cut into slices , sprinkle with olive oil (2 tablespoons), salt and pepper and cook in the oven at 180 for about 20-30 хв.Put in a blender and blend.
Onions cut into slices, minced garlic and fry all on the olive oil until light golden brown, then add grated ginger and all the spices and cook another 10 minutes on low heat. Pour in the broth and add the pumpkin, bring to a boil, adjust the salt and pepper and add 50 ml double cream, cook for 5-7 minutes and turn the heat off. Decorate with coriander, chili and peanuts.
