I love sushi! I started this year to make them myself too. I must admit that I never thought of a combination with mango and shrimp but I absolutely have to make them! I for my part am adding sugar and salt to the rice vinegar.

Are you? I was adding sugar and salt before but then stopped, since you eat it with soy sauce, I find it too salty....

If you buy the seasoned rice vinegar you don't have to add any salt and sugar as it's already included in it. I use it because I don't make sushi often or in great amounts so it's fussy to prepare the seasoned rice vinegar when I do.

If you're concerned about too much salt, buy the low sodium soy sauce.

I find that I don't use soy sauce as much or sometimes at all when I add the seasonings to the rice. I enjoy the pickled ginger and wasabi with my sushi or sometimes a spicy mayo sauce drizzled over the rolls. Or even tobiko (flying fish roe)

Yes I do. Maybe because I enjoy my sushi often with sweet dips. Like sesam, chilli, peanut or plum sauce :)
