Lobster with vanilla sauce, green pea mousse and black caviar

It’s an interesting combination of juicy meet of lobster and vanilla tenderness.

Ingredients:
Lobster - 600 gr
Green peas - 200 gr
Mint - 10 gr
Black caviar - 5g
Vanilla sauce - 80g
Ginger Chips - 3g
Pea sprouts - 3g
Berry sauce - 10g
Asparagus - 2 pieces

Ginger chips:

Peel ginger and cut it into thin slices, then fry in deep fat. After that lay it out on a napkin, after a while it will be dry and without oil.

How to preparing the sauce:

Armors of shrimps - 300g
Onion - 100g
Carrots - 100g
Dry white wine - 100g
Olive oil - 50g
Vanilla stick - 1 piece
Cream - 36 percent
Thyme - 1 branch
Salt and sugar to taste.
