Tuna Macaroni Casserole

2 can tuna, drained
1 onion, finely chopped
3 tablespoon flour
3 tablespoon butter
1 1/2 to 2 cups milk (any type you like)
3 to 4 drops (or more if you like it spicy) of any brand hot sauce / chili sauce / hot pepper sauce of your choice
1/4 cup ranch salad dressing
2 tbsp brown mustard (smooth type and not one with whole seeds in it)
1 cup italian bread crumbs
1 cup shredded cheese (any that you like)
1/4 tsp garlic salt
1/4 tsp garlic salt
1/2 tsp black pepper
3/4 cup parmesan cheese
2 tbsp worcester / worcestershire sauce
3 cups macaroni cooked to package instructions
1 to 1 1/2 tbsp olive oil
2 cups frozen peas
2 carrots, small diced
1 cup chopped mushrooms of your choice
1 cup (raw) cauliflower, chopped / diced
1 cup (raw) broccoli, chopped / diced
2 garlic cloves, finely chopped

Preheat oven 375 F / 190 C / Gas Mark 5

In a medium sized saucepan, melt 3 tablespoon butter. Add 3 tbsp flour and stir. Cook for 5 to 6 minutes on medium heat, constantly stirring. Slowly add milk, stirring all the while for 6 to 7 minutes. Add 1/4 tsp garlic salt and 1/2 tsp black pepper. Add 3 to 4 drops hot sauce. Add 1 cup shredded cheese and stir until cheese melts. Set aside.

Cook macaroni according to package directions. Drain and set aside.

In a medium sized saute pan, add olive oil, drained tuna, chopped onions, 1/4 tsp garlic salt, 2 chopped garilc cloves over medium heat and saute for 5 minutes. Add carrots, cauliflower, mushrooms, and broccoli and saute for 8 minutes. Add peas and cook for additional 2 minutes. Set aside.

In a large bowl, add tuna mixture, milk/cheese sauce, and macaroni. Add ranch dressing, worcester sauce and brown mustard. Stir until well incorporated. Taste and adjust for seasoning. DO NOT add extra salt, however, as you will be adding more cheese later.

In a 11x7 inch / 28x18cm rectangular/oblong baking dish add half of the macaroni mixture. Spread evenly in baking dish. Sprinkle evenly over macaroni 1/2 of the parmesan cheese and bread crumbs. Add rest of the macaroni mix, again, spread mixture evenly over baking dish. Sprinkle rest of cheese evenly over the top of macaroni and finally sprinkle over the rest of the breadcrumbs evenly over top.

Bake uncovered in preheated 375 F/ 190 C / Gas Mark 5 oven for 45 minutes.
