I've got cows' feet. Now what?

Anyhow, in recent months, Meijer's has begun carrying beef feet, and I've purchased a package to try; should I expect anything in the way of meat, marrow, or fat yield in addition to the gelatin? (I'm presuming that this is an item best simmered for stock or stew.)

("Exotic" was the best tag choice I could find, in the absence of something like"meat: organ" or: meat: variety".)
