Pork Shoulder

Mar 18, 2013 05:46

Hello all! I am looking for a slow cooker recipe for a 2 lbs pork shoulder. The catch is I don't want to make BBQ sandwiches because that is what I always do and I want to try something new with it. As for allergies I can not use mustard, mayonnaise, or dill but everything else is okay. Thanks is advance!

meat: pork

You might try covering your pork with a combo of canned green chillies and chopped onion. To this I generally add garlic, sage and cumin. Great with beans, warm tortillas and rice.

Or...
layer the bottom of the crock with small red taters and baby carrots. Add meat and top with a handful of garlic cloves and chopped onion. Spice with generous amount of black pepper.

Either I would cover and cook for 8-10 hours.

Supper yummy fall apart tender meat. Yum!

These both sound really good. What kind of liquid should I use for the second one though?

you shouldn't need any. The ingredients will make the sauce.

I may have to try that sometime when I'm not so busy and can keep a closer eye on it. :)

It rather depends on whether this is a really nice pork shoulder that you want to make the most of, or something tough, cheap, freezer-burned, and otherwise in need of rescue/disguise.
I tend to think in terms of apples and sage as things that go well with pork. If it's a nice joint, then sliced cooking apples in the base, and apple juice as the liquid content (add other veg as you feel inclined). If the latter, then start thinking in terms of cider rather than apple juice (so the alcohol can tenderise the meat) or in extreme cases, cider vinegar.

This sounds like a good idea. I will have to see what it looks like after it's finished defrosting and what I have on hand. Thank you!

How about a stew of sorts. Add some veg (carrots, potatoes, squash, parsnip, swede, sweet potatoes etc) onions, garlic, chili(optional) herbs and red wine to the pork and leave it to cook away. Serve it with some couscous or savoury rice.
