Low fiber, easy to digest, and freezable meals for my Grandparents

Hello cooking mavens. My dear grandma was recently diagnosed with cancer in her liver and her time with us has grown short. She is on meds now that are helping her digestion, but she is not as up on her feet and most cooking has fallen onto my grandpa. He is a lot of wonderful things, but cook is not necessarily one of them. I want to help ease their load and give them time to focus on other things by making some dinners for them that are freezable and easily reheated. Nothing whole wheat and minimal meat (there can be some) to ease in digestion. Also she isn't supposed to eat a lot of beans. I am thinking stuff like soups, stews, and casseroles. I thought maybe a lasagna would be good but to be honest I am having a hard time thinking of things. I just found out and when I think about it I get pretty sad and can't figure it out. Doing this will help them and also me to feel better. So, any ideas are greatly appreciated.

TL;DR Please help with suggestions for easily freezable dinners on the low fiber side.
