Bacon Cheddar Apple Pie

Ok. A while ago someone mentioned making a Apple pie with Cheddar Cheese and a Bacon lattice top. I found a recipe for a Bacon Apple Pie and a recipe for a Cheddar Crust so I thought I would combine them.

I made the crust first and it made enough for two pies. Well that is not a problem I can always find a use for another pie crust. Maybe a quiche. I recently read a tip that you could roll out the crust between two piece of parchment paper and then just put the parchment paper in the pie dish with the crust. It works rather well, actually.

Then I started cutting the apples. The Bacon Apple pie recipe called for 3.5 pounds of apples... It turns out that is enough for at least three pies. Well, I happened to have two pounds of bacon (they were on sale "2 for 1") so I made two very generous pies. Each lattice top took 10 slices of bacon, 2 slices short of a pound. (I candied the leftover slices.)

A friend, who was helping me with the pies, mentioned that he thought there would be cheese in the pie, not just in the crust so for the second pie I put a layer of sharp cheddar in the middle.

My test subjects report that both pies were delicious. The one with cheese in the middle was more savory and the one with just the cheese crust was more sweet. But either was filling enough for a meal.

I can't seem to find the recipes I used on the internet (even though that is where I found them).

If I ever do this again I may sprinkle sugar on top of the bacon for a candied effect.
