Hi everyone. I was hoping I'd find a community like this on LJ. You all seem like very knowledgeable cooks, so maybe you'll have some advice for me.
I am a single, broke graduate student. I live in a tiny apartment and I don't have a real kitchen. What I'm working with:
-Mini fridge (no freezer)
-Two burner hot plate
-Toaster oven
-Microwave
-Mini panini grill
-Roughly one square foot of counter space, and very little cupboard room
More details:
I don't have a car, and have to take the bus to the grocery store, then walk a while from the bus stop. Buying lots of groceries at once is impossible; with the time it takes to ride the bus, it's also too time consuming to make more than 1-2 grocery trips a week.
I have no dietary restrictions. I dislike cooking meat, but may have to get over this to widen my food possibilities. (I do sometimes buy a rotisserie chicken to cut up and include in things.) (Also, I don't like eggs--which unfortunately cuts out a good amount of easy recipes...)
I'm a very inexperienced cook in general. When I was growing up my mother cooked everything and never let others in the kitchen, so I didn't learn. I've been trying to teach myself how to cook. The internet has been very helpful!
I've been making the same five or six meals on rotation almost constantly for the past several months, and eating out too much.
What I usually make: mini pizza in the toaster oven, veggie stir fry, grilled sandwiches, pasta with veggies, and tacos/burritos. Those things can have a lot of variation, but still, it gets old.
If you have any suggestions based on my situation, I would appreciate it!
