Thai Peanut Chicken Tenders

I really want to make this.

1 lb Chicken tenders
1 teaspoon ground ginger
1/2 cup honey
1/2 cup creamy peanut butter
1/2 teaspoon cayenne pepper (optional)
1/2 cup green onions (optional)
1 tablespoon cooking oil (olive, canola, etc)

Directions:

Heat oil i large skillet over high heat and cook chicken until it is no longer pink, about 3-5 minutes. Reduce heat to low and add ginger honey, peanut butter, and cayenne pepper. Cook, stirring frequently, until sauce is bubbly and warm, 3-4 minutes. Serve topped with green onions.

Think I found a recipe to go with it. Honey Ginger Carrots!

1 tablespoon lemon juice
pinch of ground ginger
2 1/2 tablespoon of honey
1/4 cup of butter
1 pound of carrots

Bring a pot of water to a boil. Add carrots and cook until tender but still firm, about 5 minutes. Drain.

In a large skillet over low heat, melt butter with honey. Stir in ground ginger and lemon juice. Stir in carrots and simmer until heated through.

Just not sure what else to go wth it.
