I finally got around to tasting a bottle of cranberry mead (truly yummy, by the way) that I was gifted with a while ago and decided I'd love to poach some pears in the mead and serve it with ice cream.
However, I didn't want to use up all my mead (3 cups) on the pears, especially since it would barely cover them, so I made a similar tasting syrup with 4 cups of water, 1 cup of sugar, 1 cup of honey and 1 cup of dried cranberries. After the pears were poached, I decided to cook down the poaching liquid and now I have THIS.
What can I do with 2 cups of cranberry-honey syrup and about 1 cup of cranberry 'jam'?
I thought of basting some pound cake with the syrup, or adding some to a glass of white wine (still or sparkling) for a cocktail but I don't eat THAT much sweet stuff so I'm stumped.
I don't have anyone to give the stuff away to. That was my first thought. :)
