I need help with the perfect flan! I've gotten addicted to the flan from a local taqueria (ANY flan has always been my favorite dessert, but this flan puts all others to shame and has almost ruined me for other flans; I can't even make due with Cozy Shack flan anymore), but my flan bill is getting a bit outrageous (and they don't always have it!), ( Read more... )

Alton Brown's take on flan works pretty well and I have had good results. In the past I have used both pyrex mini bowls, muffin tins and ramekins to make flan. My 1st spouse had a great love of flan. Especially in the winter months. Had the beast luck with pyrex bowls.

I second the Good Eats / Alton Brown recommendation. A water bath makes the creamiest most fool proof flan, egg custard ever.
