Recipe suggestions?

My sister is currently living in China and she's struggling. There is only fast food (Pizza Hut, Kentucky Fried Chicken, etc.) in her area and she's having trouble buying produce because of concerns of the lead in the soil. She's trying to be health-conscious and eat a vegetarian diet in this situation. She also doesn't have much cooking experience.

I know her criteria right now is a little narrow, but can you help me think of some easy recipes to send her? Bonus points for hearty/warm meals, since she's currently freezing her you-know-what off without heat :(

Just to recap, they would need to:
-be vegetarian
-use things like pasta, rice, beans, and maybe canned veggies, spices, seasoning packets (like taco seasoning)
-be pretty easy to make (although I'm betting she's gonna have to learn a trick or two to live there)

For instance, I'm going to tell her to create some sauteed black beans with cumin and mix this with rice as a little Tex-Mex meal. Other ideas? OR suggestions from those of you who have lived in China about produce?
