pizzadilla

I’ve been sick for the past 2 weeks but I’m finally starting to feel better. Having eaten nothing but soup and scrambled eggs for that time, I was craving “real” food. Alas, being sick kept me from doing my usual grocery shopping so I decided to peruse the pantry and fridge to see what was there.

All I found was some mini pepperonis, Italian blend cheese, marinara sauce and flour tortillas. Well, I thought, I could make a pizza with a tortilla crust but I’m not a fan of thin crust pizza or crispy flour tortillas. I thought for a few minutes and then it hit me…

I sprayed my cast iron skillet with olive oil cooking spray. I have a lovely spread made with crushed garlic so I put a bit of that on the tortilla, threw on some cheese & mini pepperoni then folded it over. I cooked it in the skillet like a quesadilla, cut it in wedges and served it with warm marinara sauce for dipping.

Voila - the pizzadilla was born! (Sorry, no pics…my phone needs a new battery). I bet it would make a great after school or football-watching snack.
