I am planning on making a whole bunch of condiments and home sauces tomorrow and I was curious, what is the best sort of preservatives to add. I know that a lot of things have anti bacterial properties anyway however I am 19 weeks pregnant and I really cannot take any chances. Is citric acid something I can use or will hurt the results/taste? (mainly onion based ones). I have never really made condiments or sauces before so I really dont know what to use.

Also if anyone could give me some of their tried and tested recipes for condiments I would love to see them :D
