Re-creating takeaway foo yung

Tonight, I phoned for Chinese takeaway. There's a few things I can only get by ordering takeaway, and I enjoyed myself. One of those things is Mushroom Foo Yung (most of which will be tomorrow's breakfast).

I'd like to make my own foo yung, as close to identical to what I get from the takeaway as possible, but I'm having problems. I can't quite work it out from simply looking and tasting, and on-line recipes seem to bear very little resemblance to what I want.

I've sliced the right-hand end and turned it sideways so you can see the layered structure.
It's a folded omelette-like thing, but fluffier, you can see the tiny air bubbles in the thicker cut edges. There's mushrooms layered into it, and a few peas, but no other obvious inclusions. There's a little oil in the corners of the box, but not much, and it certainly doesn't taste as fatty as if it had been fried.

Whenever I search for recipes, I find something that's mostly directions on how to make a sauce. What sauce? Foo yung doesn't involve a sauce, as you can see.

Help?

Edit: I've been pointed at a recipe from Singapore that looks about right (though served cold), and a Malaysian friend on Facebook described something very similar. Apparently the thing that goes by the same name in America but contains large quantities of beansprouts and is darker and thinner and served with a sauce is Cantonese.
