First time cooking for the in-laws - HELP!

I want to make a really "WOW 'EM" dinner for my in-laws.

A little background:
-They are spending 26 hours over 2 days driving to see us. I assume they will eat a plethora of fast food along the way, so I don't want to make anything even close to resembling a sandwich, hamburger, burrito, etc.
-We live in Texas, and the temperature is equivalent to the surface of the sun so nothing too heavy. Hubby suggested meatloaf or enchiladas (my specialties) but I'd rather do something lighter.
-I'm pregnant (nothing raw) and slightly allergic to nuts
-Mother in law isn't a big fan of spice... or garlic... or anything too spicy :(
-I have the day off to cook, so no time restrictions-yay!
-The dessert course needs to some kind of birthday cake or birthday treat for my father in law.
-I'm willing to try ANYTHING, and I have the day off to experiment!

Any idea would be WONDERFUL, I'd love a recipe for a killer side dish that always pleases a crowd or an entire menu that wows :) Thanks all!
