I had a bunch of fresh herbs available and little occasion to use them the coming weeks - what to do? Homemade herb salt, turned out to be the answer ( Read more... )

yeah, but then you probably wouldn't get the taste of the herbs permiating the salt. Its more intense this way. Labor intensive, yes, but sounds like it'd be worth it!

Hm. But with all the moisture that gets released, wouldnt you end up with the salt dissolving? (Or at the very least, giant lumps) Or are you still going to dry it later? In which case, the op does the same thing, just adds the blending step to get a much finer result....

I think this is one of those recipes where if you want a good result, you probably need to just spend the time and do it once but do it well.

Thank you, this sounds fabulous! I'm forever throwing out odd bits of herbs - I shall keep this recipe!
