You know, I think that would probably help a LOT. The regular distilled vinegar just stands out way too much, yet it does add a nice tang. Perhaps a champagne vinegar? That might taste quite good!
I'm going to try this tomorrow with fresh pineapple and white balsamic or rice vinegar, depending on how sweet the pineapple is. Basically your'e making spiced pickled pineapple.
