Cornbread for a crowd?

Jun 14, 2012 17:37

I'm helping with a clambake for 50 people that's in need of some extra side dishes. My first thought was cornbread - easy and a crowd pleaser. The only tricky part is that I've never made cornbread for 50 people before. Oh boy.

Instead of multiplying a recipe by 8, I looked for something meant for a group this size and got this:

Cornbread for 50
12 eggs, lightly beaten
6 cups milk
1 1/2 cups vegetable oil
9 cups self-rising yellow cornmeal
6 cups all-purpose flour
1 1/2 cups granulated sugar

Grease two 12 x 20 x 2-inch pans and set in the oven to heat.

In a very large bowl combine all the ingredients in the order given and pour into the hot pans. Bake at 450 degrees F for 30 to 35 minutes or until light brown.

Makes 50 servings.

Does this sound right? Since it's last-minute, I don't have time to test it. Any additional suggestions would be fantastic!
