It's Spiedie Season

Spiedies are a regional specialty of Broome County NY. We even have an annual Spiedie Fest and Balloon Rally.

Spiedies were probably introduced by Italian immigrants from the Abruzzo area ("Which way EJ?"), who came to Broome County to work for the Endicott Johnson Shoe Company. In Italy the marinated skewers of lamb or goat are called spidducc'

Here is my recipe for Spiedies:
Ingredients
3 lb cubed meat (pork, chicken, beef, lamb, deer, or goat)
1/2 c. oil
1 c. vinegar
2 tbsp. Worcestershire sauce
2-4 cloves garlic, crushed
1 lg. onion, sliced
1 Tbsp. parsley
1 Tbsp. oregano
1 tsp. basil
1 tsp. salt
1 tsp. ground black pepper
1 tsp. rosemary, crushed
1 tsp. mint
1 tsp. thyme
1 bay leaf
1/4 tsp. red pepper (optional)
1 loaf sliced Italian bread

Instructions
Mix the marinade in a gallon ziplock bag. Add the cubed meat and allow to marinate refrigerated 2-3 hours or overnight.
Put the meat on skewers and grill over charcoal until just cooked. Serve with sliced Italian bread or rolls.

method: grilling, cuisine: american
