Recipes for type 2 Diabetes?

Reposting since I forgot title, hope mods won't mind...

So, my mom’s boyfriend has been recently diagnosed with type 2 diabetes and it’ hit him very hard. He naturally loves sweets and food in general, and his sudden shift in diet is taking his toll on him.

We already have a list of recipes and stuff he can eat, but we are still looking for new things and would appreciate any suggestions, especially from people who have similar diets and have tried these and found them good.



Stuff he can have:
- Raw veggies, he can eat as many as he wants, except for corn, potatoes and sweet potatoes (oddly enough, he can have the potatoes if they have been previously boiled…)
- Chicken (not every day, tho)
- Fish (same as chicken)
- Pasta made out of gluten (same as above)

Eggs, he can have up to one a week, boiled, obviously. Fruits, he’s having only 2 a day at the moment (it should eventually ease up after a couple months when they take his tests again).

He can have non fattening lacto products, but not that many.

He naturally won’t use much salt in his food, so the decrease doesn’t really affect him, but the issue is… He’s a picky eater. Child-like, really (it’s hard to make him try anything new and he doesn’t like to eat leftovers).

Does anyone here know any good recipes/ideas for things for him to have?
