These tender cookies taste like light cakes and easy in preparing.
Ingredients:
- 200 gr of butter;
- 150 gr of sugar;
- 4 egg yolks;
- 350 gr of flour;
- 150 gr of cottage cheese or ricotta;
- 1 teaspoon of baking powder;
- 1 teaspoon of baking soda
- 50 gr of nuts or dried fruits.
Preparing:
- Whip butter with sugar until white mixture arise. Keep whipping, add egg yolks and cottage cheese.
- Add flour, baking powder, baking soda, chopped&fried nuts or dried fruits, knead the mixture for some time. Than cover with a towel and leave it in a fridge for 30 minutes or more.
- Preheat an oven to 360 °F. Form 1-2 inch balls from the dough. You can dip top layer of cookie into sugar. Lay balls on the tray with 2 inch distance between each other. Bake it for 20-25 minutes or until gold-yellow crust. It should be soft inside when just baked.
These cookies stay good for a long time, even without keeping in hermetic container.
