ACTUALLY, I do! :)

They were delicious, but I had problems with them sticking to my steamer basket. I don't have a bamboo steamer, just a collapsible metal steamer basket with legs so it can be set in a pot of water. They steamed up just fine, but the bottoms stuck to the basket, and left their "skin" behind when I pried them up. Is there a way to get it not to do that?

Also (this isn't a question so much as an anecdote) I had adventures getting the whole steaming thing right. First I had too much water, so the first batch was more boiled than steamed. Luckily the basket only held three buns at a time, so it was a small batch! Then for the second batch I moved to a wider pot and didn't have any problem with the water boiling up, just with it boiling *away*. I'm going to have to spend some time with my pot later, giving it some good elbow grease, because it's kind of scorched now. Poor pot.

BUT! They still turned out delicious. I think I may have under-stuffed mine, because I had about half of the filling left over after I was done... but they still tasted great, and I'm quite pleased with myself :D

Yes, regarding your first question, that's why you place each bun on a square of wax or parchment after you shape it -- when you put the buns in the steamer, make sure they're still on their square.

Regarding your anecdote, that can be an issue! My steamer sits well above my pot (see linked picture in recipe) so my water can't even get close. I fill my pot relatively full and don't have trouble with the water running out for this reason. But you can always check and refill the water partway through, I think, if that's an issue!
