Spicy bean burritos

This is such a simple recipe that's perfect for lunch or dinner - and it's healthy too, so won't spoil your new year's resolutions!

Spicy bean burritos
Serves 3
3 flour tortillas
400g tin kidney beans (240g drained)
400g tin black eye beans (240g drained)
1tsp cayenne chilli pepper
1tsp hot chilli powder
1tsp paprika
Black pepper
100ml water
Half a small lettuce
2 large tomatoes
30g cheddar cheese, grated
6tbsp mayonnaise
Drain the two tins of beans and add to a saucepan with the spices and black pepper. Add 100ml of water to prevent them from sticking. Stirring frequently, cook on a medium heat for 15 minutes, or until the beans are soft and beginning to break down. Mash once or twice with a potato masher if desired.
Distribute the beans into the three tortilla wraps, and top with the salad, cheese and mayonnaise. Wrap up, and eat while the beans are still warm.
