Recipe help?

I have chicken thighs and drumstucks and a ton of bacon that I need to use up. I thought I could combine the two into a tasty meal, but all the recipes I've found involve some sort of cream of something soup. We are allergic to dairy so it has to be dairy free (and also tree nut/peanut free as well). I need recipe help! Any vegetable is available ( Read more... )

I've made appetizers by wrapping small pieces of chicken breast in bacon & hot peppers. Maybe you could season your chicken, wrap in bacon, & bake as a main dish, rather than appetizer?

Wrap the thighs and drummies in the bacon, attach with toothpicks. Add a 1/3 c balsamic vinegar, 2/3 c olive oil and a couple of cloves of garlic, diced, top with mushroom and celery...ENJOY!

as others have said, wrapping the chicken in bacon is wonderful - it is a natural baster and you get an awesome treat when done

what I would do is to make a bed of veg in a dish (whatever you fancy - brocoli, onion, carrot, kale, etc) and season with a bit of thyme, a touch of salt and pepper. wrap the bacon over the thighs and place on top. bake at 350 until the chicken is cooked through

If you are thinking of smth really hearty and simple try this recipe for corn chowder http://allrecipes.com/recipe/grandmas-corn-chowder/ with a few modifications. Step 1 double the bacon (and keep one third of crunchy bacon bits for topping your chowder when it is in the serving bowls), Step 2 up the quantity of potatoes you are using by 1/2 (so if 4 potatoes add 2 more potatoes - I would actually use a couple of sweet potatoes for better effect, lovely with salty bacon!). Step 3 chop your chicken into bits and add to onion and potatoes when browning it. If you want you can reserve the bones and simmer them in 4 cups of water with a few pepeercorns, a bit of onion carrot etc (celery, parsnip, whatever you like) and use this instead of the water and cream of the recipe (NB only as you are not using cream add all the liquid at once). Step 4 - the most important one - to make the chowder taste chowderish lack of cream notwithstanding: puree half of the ( ... )

Also fancy bacon wrapped chicken/ditto prunes or chunks of pineapple kebabs :-) But that's more appetizers.
