Freeze for Later Resources

I'm looking for more resources on foods that you prep and freeze for later. Whether it's adapting dishes you usually make into freeze for later or foods explicitly made for that. I'd also like things on defrosting safely and properly. I've read all the posts here and it's helpful, but I'm looking for more. (I know that these may seem like really dumb questions to some, but I've always went from eating a lot of processed TV dinners or spending a lot of time cooking.)

I was at the bookstore and I saw Taste of Home: Freezer Pleasers Cookbook. At first I was pretty excited, but it was full of like, Sandra Lee-type adaptations of food. Like instead of a freeze-for-later lasagna, it was like some weird reinterpretation of lasagna using pre-packaged food, and with ten different varieties of lasagna in general. Lots of heaviness in the foods too. It was kinda inspiring, but not as helpful as I would like. (It had great tips too, but I'm not paying for that!) There was a related book on Amazon that had the same issue.

I don't really want to sacrifice variety, money, and vegetables to eat nice. Things that use frozen veggies and such would be great. Anything goes to be honest, just low on packaged foods. And websites about this sort of thing would be nice too. I'm really on the lookout for:

  1. Casseroles. Not just lasagna.
  2. Any food that can be pre-prepared, stored, and when cooked doesn't require a lot of maintenence
  3. Tips on premaking cakes and other desserts!
  4. Tips on using frozen veggies and cooking them with flavor. I'm the shit at fresh green beans but I can't do it with frozen green beans, and my extended family's method of cooking frozen stuff is put it in the pot with butter and salt and pepper (blah).
  5. Not on freezing soups and chilis! Those are great in moderation, but I know how to do those. I like meals you can chew.

Anything in this line would be helpful. My goal is to spend my day off prepping the week's foods (I still love cooking), and on workdays, I can sit down for fifteen minutes or so while my food cooks, instead of nursing it the whole time.

A few more questions, not related.
I'm looking for a recipe for chicken queso soup! This cafe in Columbia, TN had a glorious chicken queso soup and I want it. In Nashville, TN, this Thai place had an amazing Lemongrass soup and I would like that too.

Also, I would like some stuff about incorporating tofu into my diet. How do I make it flavorful and non-gross?
