Hello all!
I always seem to come away with good ideas from here so here I am back with another "What do I do with it," post. :-)
So, apparently in our CSA box we are getting delicata winter squash.
I confess that as winter squash goes, I am only familiar with butternut, and that is only somewhat. Growing up, the only time we ate it was at thanksgiving. I've never cooked it; only eaten it.
So now we're getting apparently 2 of these delicata squashes. My first question is being somewhat familiar with butternut squash, are they the same size?
What about taste/texture? I mean, I could be really boring and bake them in the oven and scoop out the insides like the butternut, but I was hoping to be a little bit different. :D My other thought is that from what I've read, apparently unlike a butternut squash, the skin of this is something that you can eat. Feel free to correct me if I'm wrong.
also, my partner has never eaten winter squash, so I'm hoping to find something that will make him not hate it. He's... Well... a bit iffy sometimes when it comes to trying new veggies. :D
I had originally thought of a roasted squash soup, but I only have two and not sure if that would be enough.
Anyone have any recipe ideas in particular something that is your favorite way to cook these?
It can be soup, roasted, whatever. My only request is nothing involving baking it with apples or apple sauce.
I have a very picky man who cannot stand cooked fruit. *sigh*
