Poaching Egg Troubleshooting

Aug 14, 2011 22:57

Hi all,

I tried my hands at poaching eggs for the first time earlier today. I tried two eggs at once, but unfortunately I didn't have time to troubleshoot any more after my disaster.

So, I brought the water to a boil and then reduced the heat. I put in some salt and a dash of vinegar, and then checked the temp of the water with a thermometer until it was about 170 degrees F or so. I then spun the water, cracked the eggs, and dropped them in.

The eggs immediately fell to the bottom of the pot, which I didn't think was right. And then, after a bit more than a minute, I tried to pick up the eggs with a slotted spoon and the whites just sloughed off the yolks, although they had cooked just fine, and the yolks did as well. I didn't eat anything though, because I was a bit wary of everything.

Any ideas what could have gone wrong? I think it had a bit to do with the eggs sinking. I'm wondering if either I dropped them in from too high, or I didn't spin the water quickly enough. Thanks for any tips!
