St Patty's Day menu

I've invited a couple of people over for dinner on St Patty's Day (the 17th), and discovered one is a vegetarian. Naturally, I'd already planned the main course as corned beef - and the beef has been corning in the fridge for about a week now. I hadn't settled on much of the rest of the menu, though I was thinking of doing Irish soda bread, mashed potatoes, roast potatoes, and garden salad. I need enough for this vegetarian to eat; I certainly don't want her to feel left out, just eating side dishes; I'd also like something that goes with the theme (American St Patty's Day), so does anyone have any ideas for the rest of the menu?

Specifically, it needs to have no meat, tofu, or fish. Cheese, milk, and eggs are fine, though.
