cook 1 can (15 oz) of vegetarian chili on the stove. add 1/4 cup italian dressing, 3 cup of vegetable broth, 1 cup of salsa and 3 cup of cooked rice. stir on medium heat for 10-12 min.
I follow that recipe but you can basically exchange the cheese for any flavourful mellow cheese that you see fit (I have tried it with Edam and it worked).

'Sausage' and peppers
Veggie sausage and sliced bell peppers, sautee in a pan, squeeze a lime over it all and serve. nomnomnom
salad, any type of salad with kidney beans - great source of protein
um.....yep that is all I got!
