vegetarian sausage?

I'm planning on trying a recipe for colcannon but I think I will need to serve something else with it. We're not vegetarians but try to only eat meat a few times a month. I was thinking some kind of vegetarian sausage might be good with the colcannon, but searching google and recipe websites has given me such a wide variety of recipes I wouldn't know where to begin finding a good one! I'm envisioning a recipe that doesn't have any funky things like egg substitutes (we eat real eggs) or weird protein fake-meats. I've seen recipes that are rice, oat, lentil, bulgur wheat, etc etc etc based. I kind of want to stay away from rice because we eat that a lot anyway.
So, does anybody have any recipes for a "vegetarian" sausage that would go good with some irish grub? Thanks!
