Chorizo and Prawn Linguine

 Anyway, let’s get back to the dish at hand. I suppose I shouldn’t really have been surprised that this dish turned out good; after all, you can possibly go wrong with a prawn and chorizo combo!


 I’m going to try and give as many exact measurements as I can, but please remember, these were more or less what were left in the fridge. I would strongly recommend that you tweak the recipe to suit your taste.

Serves 1 extremely generous portion or 2 measly portions

Ingredients:

2 garlic cloves, finely sliced
1 small chorizo sausage, sliced (cooking chorizo)
approx 5 prawns, shelled and de-veined
1 small orange bell pepper, diced
2tbp olive oil
salt and pepper
chilli flakes
linguine (I used fresh linguine coz I had some left over in the fridge that needed to be used up)

Method:

First things first, put your water to boil in a saucepan large enough to fit all the linguine. Follow the instructions on the packet and cook your linguine. The fresh linguine I was using only took 3-4 mins to cook.

In another pan (make sure this pan is large enough to hold everything), heat up some olive oil. Chuck in the sliced chorizo and watch the oil turn a lovely red colour. Cook the chorizo to your liking; I like my chorizo quite crispy.

Once the chorizo is almost done, add the garlic and peppers and cook for 1 min.

Now add the prawn. Once the prawn is cooked, drain the linguine and add it to the prawn.

Give it a good mix, making sure the linguine is well coated in the oil. Add some chilli flakes and season to taste.

And there you have it; the food is done in the time it takes to cook the linguine! It can’t possibly get any easier or tastier than this :)
