Roasted Eggplant...?

In the local Greek/Turkish buffets (if you live in the DFW area, I'm referring to Fadi's and Dimassi's) they serve a roasted eggplant that is divine.

Think eggplant, roasted down and slightly caramelized, until it is soft and creamy (but not mushy!). It is warm, thick, palette-coating and very satisfying. I can, and do, eat it by the forkful, but it is also wonderful when spread on warm pita bread. Note, I am not referring to babaganoush; this is also good but a different critter entirely. This is very much a roasted, hot, vegetable dish.

Looking at thier menus, they call this 'Eggplant with Pomegranate Molasses'

Now, I've Googled this and I now have a few recipes to try at home, but I was wondering if anyone has ever had similar/made similar, and have a tried-and-true recipe to recommend?

Now I'm craving it! >.
