My office potluck this year is themed to be Hawaiian and we have to sign up to bring either: an appetizer, a main dish, or a dessert - any of which that needs to Hawaiian. A couple of stipulations, the dish either has to be able to be eaten at room temperature, or maybe in a crock pot or be stored in the frigid cold of our cars until the party starts as I'm sure our one and only fridge in the office will be jam packed with everyone's stuff (that means I have to cook it the night before! ugh...). The dish also has to feed about 30-40 people as well.
I prefer not to make anything with a strong pineapple taste as half of the office hates pineapple, and I do not want to make anything with seafood as I have an allergy and can't taste the fish dish to ensure it's yummy-ness.
Some of the items already being brought are: Hawaiian phyllo bites, Hawaiian meatballs, ambrosia, pineapple cheesecake, and I believe that someone is bringing some sort of rib dish...
I'd prefer to bring a dessert as that is what I'm known for in the office, but anything works - I just need some ideas to bounce around.
