I was making honey nut cream cheese for my morning bagels when Husband wandered by and got nostalgic about the cream cheese his mom used to make for him. I had all the parts (all two of them!) so I went ahead and made some, and then thought I'd pass the recipe, such as it is, on.

Cherry Cream Cheese Spread

1 small jar maraschino cherries
1 brick cream cheese, room temp

Drain, de-stem and coarsely chop cherries; set aside.
Beat cream cheese until fluffy.
Add chopped cherries, stirring in thoroughly.
Store covered in fridge.

And that's it! Husband likes it on bagels and toast, but apparently his mom used to make it as a filling for crustless sandwiches around the holidays. (I kept the juice I drained and am considering making it into a syrup for ice cream.)

Today's kitchen discovery: When you don't bother to uncrystalize the honey before you put it in honey nut cream cheese, it makes for interesting sweet, crunchy bits in the spread. If I could figure out how to make the honey crystalize, I might do it on purpose!
