Delish Fish?

Hello there, I am a looooong time lurker and first-time poster. I've tried many of the recipes posted here and loved them all, so now I come to you for help.

In an effort to be healthier and also hopefully to shift a few pounds, I'd really like to incorporate more fish into my diet. (not to mention there's an AMAZING fishmonger 5 mins from my house that only sells fresh-from-the-sea, sustainably-caught fishies of numminess). But I'm a real novice when it comes to cooking fish.

So, my question is, what are you favourite ways to cook fish? Favourite flavour combos? Tips/suggestions to avoid the pitfalls of rubbery and/or salty fish? Extra points for white fish recipes or ideas for Sole, my new fave.

So that I'm not just taking your suggestions without giving anything back, here is a lovely Sea Bass recipe that the aforementioned fishmonger recommended and which was very easy and delicious.

Ingredients: One whole Sea Bass or 2 fillets per person
One lemon
One or 2 fennel bulbs, depending on how much you like fennel.
One red onion

Directions: Heat oven to 180C. Chop and toss fennel and onion with a little olive oil and the juice of half the lemon, salt and pepper. Roast in a shallow pan until just beginning to turn crispy at the edges.

Score the skin of the sea bass (I made 3 diagonal incisions into the skin), season with s&p, then lay skin-side up on top of the fennel and onion. Drizzle the skin with a little olive oil and the juice of the other half of the lemon. Return to the oven and roast for 8 mins (12 if cooking the whole fish).

Serve with some scrummy new potatoes and parsley.
