Edit: Wrap....

Hey everyone!! I'm on a mission to figure out a really good on the go special meal tonight for a special someone who isn't going to have a lot of time to each dinner. He will definitely need something to eat before he has to go to practice, he barely has enough time to get home pack his stuff up and get to the studio on time.

I was trying to come up with something that was easy and a bit filling to eat on the go.

His all time favorite meal is almond chicken which we cannot get here in Texas but the last time I made it (from this recipe http://chinesefood.about.com/od/poultryrecad/r/almondchicken.htm) it was pretty spot on. I was wondering if this would convert well in to a wrap. The wrap would be rice, fried chicken, almonds, shredded lettuce and green onions with a brown gravy dipping sauce. Does that seem like it would be something tasty and doable on the go? I've never really done a fried chicken wrap (or any wraps at home now that I think about it).

If this doesn't sound appetizing, Does anyone have any other ideas for tasty on the go foods?

EDIT: I ended up making something a little different to save time and the almond chicken for a dinner later this week.

Contents for wrap:
Whole wheat couscous, roasted almonds, roasted red peppers (from jar), sauteed onions (red, yellow would have worked well too) with sauteed garlic and mushrooms, black beans and shredded lettuce.  Seasoned with a little salt and i like a lot of pepper, some cumin, and the beans were seasoned with chili and seasoned salt (they were cooked in a crock pot).

To top the fillings off and give them a little pop I used a garlic tahini sauce from 100 cookbooks and subbed lime instead of lemon... (http://www.101cookbooks.com/archives/ten-minute-tasty-asparagus-and-brown-rice-recipe.html)
Tahini Dressing:
1 garlic clove, smashed and chopped (i grated it)
1/4 cup tahini (just used a large spoon and a good gallop)
zest of one lemon (used lime instead)
scant 1/4 cup freshly squeezed lemon juice (i used the whole lime)
2 tablespoons extra-virgin olive oil (i eyeballed it)
2 tablespoons hot water (i eyeballed it)
scant 1/2 teaspoon fine grain sea salt (didn't use any extra salt)

We used a thin local pita for the wrap also.

The whole thing turned out better then i had expected, it was easy, relatively quick, made a lot, was filling, cost effective and super super yummy. Any cooking level could have made this, i did used a couple/few pans. My carnivore actually loved it!
