SoTrack This, for breakfast this morning I made something incredibly easy and awesome. I would describe it as a sort of disassembled Spanish omelette.
First, I took half a tomato, half an onion, half a green bell pepper, and one stalk of celery (leaves included) and sauteed it all together with a pinch of coriander, oregano, thyme, and kosher salt. Then I cracked an egg over it and cooked the egg like I would cook a normal sunny side up egg, but directly on top of the vegetables. Then I put it with wheat toast and it was ready to go.
