Amusement park food

Alright my trusty foodie friends,

The objective: Lunch and Dinner at an amusement park.
The environment: Nice summer day (hopefully!) with no source of heating.
The challenge: I have a gluten intolerance! (No wheat, rye, barley or oats).

I was figuring I could do the usual potato salad, watermelon, deli meat and bread (with my special bread) type situation for lunch. That works for me.
But .. dinner? Rice pasta doesn't cool well for me. I don't know what it is, but it goes all weird and ick, so tuna macaroni salad wouldn't be so awesome. I was trying to figure out what else.. but I'm so used to at least having a microwave.
I will have a cooler with me.

Thanks for any suggestions. :D My creativity is blocked!
