Chicken Teriyaki with Soba Noodles in Peanut & Ginger Sauce

I'm new to the community, but everything sounds so yummy, that I decided to put up a recipe post of my own. The recipes will be below the cut.




Chicken Teriyaki

300g deboned chicken thighs -- I used about 2 big chicken breasts, cut up into pieces
1 tbsp sake
4 tbsp soya sauce ( which equals 1/4 cup -- so much easier)
4-5 tbsp mirin
2 tbsp sugar
1 tbsp vegetable oil

1. In a bowl, put in sake, soya sauce, mirin and sugar. Mix well and marinate the chicken in it for about 20 minutes.
2. Heat the oil in a pan, brown both sides of the chicken thighs and leave until cooked.
3. Pour in the teriyaki sauce that was used to marinate chicken in the pan and continue to cook until the chicken has glazed and covered the chicken.
4. Remove the pan from heat, serve on a plate and drizzle any remaining sauce from the frying pan.

Soba Noodles in Peanut Ginger Sauce
(I forgot where I got this recipe from)

9 oz  soba noodles
2 tbsp peanut butter -- next time I'll use 3 or 4
2 tbsp soy sauce -- I'll use 3 next time
1 tbsp mirin -- I'll use 2 next time
1 tbsp grated fresh ginger
2 garlic cloves, crusted
1 tbsp toasted sesame oil
a few red chili flakes

Bring a large saucepan of water to a boil and cook the soba noodles for 4 minutes or according to the package directions. Meanwhile, make the dressing by mixing the peanut butter with the soy sauce, mirin, ginger and garlic. when noodles are done, drain and return to pan. Swirl in the sesame oil, then add the peanut mixture and toss the noodles so they're well coated.
