Hello my name is Sunny.. Thank you ALL for being this community.. I have taken on a WHOLE NEW WORLD of cooking since I have joined.. :) I had a brain bleed 8 years ago and I am now a "housewife" raising my 3 boys as a single dad... We all live in MY MOMS house... My ex wife has medical issues why she is not helpin' raise these boys.. And that is OK.. :) These boys are the best thing that ever happened to me.. Anyways, I have found myself cooking for these three 17-18 year old boys for over a year now and they LOVE THIS COMMUNITY TOO!!! I have printed off over 40 of your recipes I have found here and I have designed my own "Cook Book"
I hope that is ok with everyone here.. (I'm not gunna sell it or anything...)
So I call my creation "Chile a la Gringo" It is my home made recipe for green chile I have been making for years.. I'm gunna cut it here cuz Its picture heavy.. (I am so proud!!! LOL)
This is a four pound package of diced pork.. (I like to use a good size pork tenderloin and cut it up but mom had this big package in the freezer and it needed to be used...)
I used approx. 1/3 of it.. (About a pound and a half) If any of you dont have one of these "Miracle Thaw" thingys GO GET ONE!!! THEY WORK GREAT!!!
It took 15 minutes to thaw a pound of hamburger AND a pound and a half of frozen pork.. These are the rest of the ingredients you need..
Yes STOKES Green Chile Sauce.. It makes a terriffic soup base.. If you are not fortunate enuf to find a vendor on the corner in a van selling fresh green chiles then you can use these
I like to bake my pork in the oven in a separate dish with this mixed into the meat.. Its called "Jamaican Jerk"
And I bake it in a 6x10 Casserole dish for 20 minutes at 280 degrees with ONE can of the Stokes..
And one packet of pork gravy mix.. And then I start on the peppers... Hopefully you have one of these handy dandy food processor things to dice it all up with a large yellow onion quickly..
I usually slice my Garlic separately cuz I like big chunks of it.. And I use a LOT of it...
Prolly 6 cloves.. After it bakes for 20 minutes
Pour the whole casserole dish into the pot with the veggie mixture AND a 12 ounce can of Black Eyed Peas Give it a tablespoon of salt and a cup of water and stir regularly while it cooks on low heat for at least an hour.. And it is ready.. Use fresh jalapenos to put as much "heat" in it as you want! (I like it hot so I put a Habanero in it too!
Works great to smother burritos with..
And is REAL GOOD with a tortilla chip... And it will leave plenty "gravy" on your plate to sop up in an extra tortilla.. Yes it is a "Novice" recipe.. I am no where near as professional as Kay Kayotic is.. *drools* But it IS MINE!!! And the boys will eat it within a week... Thank You Everybody!!! :)
