Passsover Recipes

For some of us, passover is looming around the corner. I know when I moved out on my own, I had no idea how to make ANY of the traditional dishes my family served, and well.. asking them wasn't exactly an option. So, I would have loved this help, so now I'm sharing it with you! These are a few dishes that I have tweaked and worked to taste exactly like my mom and grandma made. They may not all be kosher if eaten together, but my family was about the tradition of getting together and sharing a meal, rather than stressing out about kosherness.  


Mom's Brisket

1 4-pound brisket

3 tablespoons oil     
4 cloves garlic, crushed
2 cup red wine
2 cups beef broth    
8 carrots, cut into 1 inch-thick pieces
3 medium onions, coarsely chopped
1 tablespoon Hungarian sweet paprika
2 bay leaves
1 teaspoon dried rosemary     
1 teaspoon dried oregano
1 teaspoon dried thyme    
Coarse salt to taste
Freshly ground black pepper to taste

Instructions:

Heat oil over high until it ripples.

Season beef on both sides with salt and pepper.

Place into pot, and sear all sides until brown and caramellized.

Remove meat, lower heat to medium and add onions.

lightly sprinkle onions with salt, and sweat them until they become translucent. (about 10 minutes)

Add carrots and spices and allow to cook for 2 minutes.

Add wine, and allow to cook out for 5 minutes.

Add the meat back in.

Add beef broth until the meat is covered.

Bring to a boil, then cover, and turn heat down to low.

Simmer for 4 hours until fork tender.

Strain vegetables out, saving the broth.

Slice (or shredd) the meat, and put back into the broth.

Plate, and serve. (the veggies are pretty nommable too, but not everyone lieks their carrots cooked to crap. lol)

Matzoh Balls

4 Eggs
1/2 cup club soda
3 tbsp vegetable oil, or chicken fat
2 tbsp finely chopped parsley
salt
pepper
1 cup matzoh meal

Instuctions:

Wisk eggs together

add in club soda, oil, salt and pepper. Careful not to oversalt, as it will pick up so salt from the broth.

Blend in the parsley and matzoh meal.

Cover and refrigerate for an hour.

Bring 5 quarts of water (I use chicken broth) to a boil.

Rub some oil on your hands, and form balls with about 2 tablespoons of the mixture.

Drop into the boiling water, and simmer, covered for 25- 35 minutes. Try not to peek.

Charoset

5 sweet red apples. I use red delicious.
3/4 of a cup of chopped almonds
2tbsp of red wine
1tsp of cinnamon
1tbsp of sugar

Chop the apples into small pieces.

Combine with the other ingredients in the bowl.

Allow flavors to meld in the fridge overnight.

Serve, and enjoy. :D
