Corn Fritters with Toasted Cumin and Onion

Corn 9 ounces
Flour 3/4 cup
Corn meal 1/4 cup
Salt 1/3 tsp
Sugar 3/4 tbsp
Cumin seed 1/3 tsp
Jack (Shredded) 1 oz
Egg, beaten 1
Evaporated milk 1/2 cup
Vegetable oil 3/4 tbsp
Onions, finely dice 1 oz

Preheat a deep fryer with choice of oil

1. Toast and grind your cumin seeds
2. In a bowl combine the corn, flour, baking powder, salt, sugar, cumin and cheese
3. In s a separate bowl combine milk, oil, eggs, and onion
4. Make a well in the center of the dry ingredients
5. Pour in the wet ingredients and stir just until combined.
6. Using a small scoop, ½ oz or 1 oz deep fry until a nice golden brown.
