The Bacon Bird

By now many of us have heard of the Bacon Explosion and the polar opposite, the Veggie Explosion.

I decided to parse the difference, well not so much but simply make a yummy meaty rendition with just as much flavor less fat and more nutrient dense protein.

½ large onion dice
4 tbsp salted butter
4 cloves garlic crushed and minced
½ cup prepared pesto (I have ton frozen that I make each year)
1 lb turkey or chicken sausage, raw ( I used Per due breakfast)
3 whole large breasts of chicken - butterflied
1 lb of bacon
Spicy seasoning mix (I used Auntie Arwen's Lemming's Leap)

Either preheat your oven to 350, or get your grill ready.

Start off sauteing the onions and garlic in the butter until translucent.

Add in the raw sausage and cook until done, add the pesto and combine.



Arrange the bacon on a sprayed pan in basket weave format. Sprinkle Auntie Arwen's Lemming's Leap seasoning to taste. It's a mix of black pepper, garlic, onion, cayenne pepper, salt, and paprika.



Butterfly your chicken breasts.


I used a little over three pounds


Arrange your chicken breasts and layer on the sausage mixture. For better, quicker cooking make sure the sausage is still warm.



Roll the yummy madness and sprinkle more seasoning


If in the oven used the same sprayed pan and cover with foil.

If on the grill keep on the cooler side using indirect heat and cover close the lid. Cook about an hour to an hour and a half depending on thickness. Make sure the internal temp is at 165 degrees.



Brush with a nice BBQ sauce for the last ten minutes of cook time. Let it rest for a good twenty minutes before slicing.
