Asian Pear & Cranberry Cookies

Mar 21, 2009 23:54

I went to the farmers' market today and bought some Asian pears. They're so delicious. And since I was sitting around earlier and had nothing to do, I felt it would be the best of times to bake something. At Mixing Bowl they were having a contest for cookies, so I decided I would attempt to make a cookie with fruit in it. I'd never done that before, but it turned out well!

(also, to plug my own, if you're intrigued, vote for me there for these cookies or for the St. Patty's Day Contest where I entered my Irish Car Bomb Cupcakes)

Ingredients:
1/2 cup sugar
1 1/3 cup brown sugar
1 egg
1 tsp vanilla
1/2 tsp salt
2 cups flour
1 tsp baking soda
1 cup dried cranberries
1 cup Asian pear, peeled and finely chopped
1/4 cup milk

Directions:
1. Beat together butter, sugar, egg, vanilla and salt.
2. Add 1 cup of flour and mix in.
3. Add cranberries, pear, milk, and remaining flour. Mix with a wooden spoon.
4. Drop by teaspoons on cookie sheet. Bake for 10 minutes at 350.
