Cheap, light, and possibly healthy ideas?

So our hours at work were cut from 40 to 32 hours a week, which is an instant 20% pay cut. Ouch. I mean, at least I still have a job, but still. Ouch. I'm going to have to eat really cheap!

Usually when I need to eat cheap, I just pick some of the canned veggies from my pantry and throw them in the crock pot, with or without meat from my freezer, and I have a couple days' worth of meals. Unfortunately, the weather is heating up so stews like that aren't really what I want. They are heavy and hot, when I want light and cool.

To throw another wrench in the works, I'm trying to eat more healthy. I'm aiming for generally low fat foods, with more "good" things in them.

With all of this in mind, I'm having a hard time coming up with ideas for meals that I can cook in batches on the weekend and have leftovers for the week. I mean, I can always do pasta salad, but a girl can't live on pasta salads alone, no matter how tasty they are. So I turn to you, oh cooking community, for ideas. What are some ideas for cheap, light, and hopefully healthy foods?
